COCONUT MUFFINS
 

1 c. sugar
4 tbsp. butter
2 eggs
1 tsp. baking powder
1/4 tsp. salt
1 1/2 c. flour
2/3 c. coconut (toasted)
1/4 tsp. coconut extract
1/4 tsp. orange extract
1/2 c. milk

1. Cream sugar, butter and eggs together.

2. Blend in all other ingredients.

3. Divide batter evenly into 12 greased muffin cups or use paper cups. Bake at 350 degrees for 20-25 minutes. Yield: 1 dozen.

Note: Muffins will be light in color.
