COCKTAIL PUFFS
 

CREAM PUFFS:

1/4 c. butter
1/2 c. boiling water
1/2 c. flour
2 eggs, beaten

FILLING:

Shrimp or chopped chicken, lobster, crab, tuna or meat salad (ham)
Mayonnaise

Add butter to water and heat until butter melts. Add flour all at once and stir vigorously until ball forms in center of pan. Remove from heat and let stand 15 minutes. Add 1 egg and beat until thoroughly blended, add second egg and beat as before, mixture should be very stiff. Arrange by spoonfuls, 2" apart on a buttered cookie sheet. Bake at 375 degrees until there are no beads of moisture on puffs. Puffs will be crisp. Cool. Fill with shrimp (or other filling) mixed with mayonnaise or other spreads.
