1 c. old-fashioned oatmeal, uncooked 2 c. boiling water 1 1/2 tsp. salt 1 pkg. yeast & 1/2 c. warm water 1/2 c. molasses or brown sugar or white sugar 2 tbsp. oil 4 1/2 c. flour Put oats and 2 cups boiling water together. Let cool to warm. Dissolve yeast in 1/2 cup water. (Add 1/2 teaspoon of sugar to yeast and let it set for several minutes until it starts to work.) Add molasses (dark moist bread) or brown sugar (lighter bread) or white sugar (quite light bread), oil and flour. Stir well. Place in 2 oiled bread pans. Let rise until it reaches at least the top of the pan or 1/2 inch higher in a warm spot. Bake at 375 degrees for 40 to 45 minutes. |
