STRAWBERRY BANANA LOAF (or Muffins)
 

2 eggs
1 c. sugar
1/4 c. oil
1/2 c. mashed strawberries (if frozen thaw first)
1/2 c. mashed banana

In mixing bowl beat eggs until frothy. Stir in oil, sugar, strawberries and bananas.

1 3/4 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. rolled oats
1/2 tsp. soda

In separate bowl combine flour and oats, baking powder, soda and salt. Stir in distribute evenly then add all of it to first bowl. Stir to moisten. Turn into greased 9 x 5 x 3 inch loaf pan. Bake at 350 degrees for 1 hour until toothpick in center comes out clean. Cool 10 minutes. Remove from pan to cool on rack. Wrap well. Works really well for muffins too. Put into lined muffin cups for muffins. Bake at 350 degrees for approximately 20 minutes.
