3 c. all-purpose flour 2 tsp. baking powder 1 3/4 tsp. baking soda 1 tsp. salt 2 tsp. pumpkin pie spice 1 c. raisins 1 c. chopped pecans or walnuts 2 c. sugar 2 c. cooked, mashed pumpkin 1 1/4 c. vegetable oil 4 eggs, beaten 2 tsp. vanilla extract Combine first 7 ingredients in a large bowl, stirring well. Make a well in center of mixture. Combine remaining ingredients, stirring just until moistened. Spoon into greased muffin pans, filling two-thirds full. Bake at 350 degrees for 18 to 20 minutes. Yield: about 3 dozen. |
