1 egg 1 c. low fat milk 1/2 tsp. vanilla extract 1 c. all purpose flour 2 tsp. baking powder 1/2 tsp. salt
Beat egg, milk and vanilla together. Combine remaining ingredients and stir into the batter, just until somewhat smooth, but slightly lumpy. Don't over mix.
To make pancakes; pour a little batter onto a hot griddle. Leave at least 2" of space between pancakes. Allow them to cook until the tops of pancakes are bubbled, then turn with spatula. Cook just until the underside is lightly browned.
Makes 10 (4") pancakes. Recipe may be doubled. Unused batter may be stored in the refrigerator. Thin with a little cold water if batter becomes too thick.
These pancakes are sooo yummy and easy! I make them at least once a week. I add more liquid as I like a thinner pancake-more milk and vanilla. Today I added some nutmeg. It's a perfect amount for two servings. Way quick and easy! Thanks, Charles!

These pancakes are perfect. Not too sweet which is what I prefer. I add a drop of lemon to butter softened at room temp and mix in a tsp of powdered sugar and mix it up. I put that on pancakes with some powdered sugar over it too. Also I did this with orange marmalade as a topping..so great!!!

I thought these pancakes were a little salty so I added a fourth of a cup of sugar (you could add less I am sure) but I did like the consistency. The egg made them taste very cake-y and I like thinner pancakes, but if you like them light and fluffy I would try another recipe.

I added blueberries and made a maple butter syrup (half butter and half maple syrup). Add some toasted nuts (pecans, walnuts, or almonds) on top for a little crunch and sprinkle some powdered sugar on top.
