GARLIC & MOZZARELLA BREAD
 

2 med. cloves garlic, crushed
1/2 c. butter
2 tbsp. sun dried tomatoes, optional
1/4 c. chopped fresh basil
1 1/2 c. shredded mozzarella
1 loaf Italian bread

Put minced garlic, butter and tomatoes in food processor. Blend until smooth. Transfer to small bowl. Add cheese and basil to the garlic mixture; mix well. With serrated knife, slice bread diagonally at 1 1/2 inch intervals (do not cut through).

Using 1/2 the mixture, spread a rounded tablespoon of the garlic - cheese mixture between each section of the bread. Turn bread in opposite direction. Cut bread to form a diamond pattern. Spread the cuts with the remaining garlic cheese mixture. Wrap in foil. Grill for 8 minutes or until cheese is melted, or bake at 350 degrees for 15-20 minutes or until melted.
