4 tbsp. softened butter 1/4 c. brown sugar 1/2 c. sugar 1 egg 1 c. buttermilk 1 3/4 c. flour 4 1/2 tsp. cinnamon 1 tsp. baking soda 1 c. rhubarb, chopped
Mix all ingredients. Pour into paper lined muffin tins. Bake at 400 degrees for 15 minutes. Makes 12 muffins.
