OLIE BOLLEN
 

"Olie Bollen are a traditional treat on New Year's Eve in Holland. If they are fried too slowly, the crusts become hard and tough and the Olie Bollen becomes greasy."

1 c. sugar
1 1/2 c. milk
3 c. flour
3 tsp. baking powder
1 tsp. salt
2 c. raisins

Beat eggs and sugar together. Add milk. Mix dry ingredients in a separate bowl. Add these gradually. Mix well.

Soak raisins in boiling water for half an hour. Drain and add to other ingredients.

Shape balls of batter with a spoon and drop them into the hot oil (375 degrees). Deep fry for approximately 8 minutes or until golden brown.
