BAKING POWDER BISCUITS (Dropped
Biscuits)
 

2 c. sifted all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
4 tbsp. shortening
3/4 c. cold milk

Sift the flour, baking powder and salt together. Cut in the shortening with fork or pastry blender, until the mixture is the consistency of coarse meal. Stir in the milk to make a soft dough. Let stand for about 2 minutes.

Drop dough with a fork on an ungreased baking sheet or baking pan. Bake in hot oven for 15 minutes or until golden brown (oven should be set on 450 degrees). Makes 15 medium biscuits.

Variations:

Sour Cream Biscuits: Use sour cream in place of milk, adding 1/2 teaspoon of soda to the cream before blending with the dry ingredients. Bake at 450 degrees until brown. A somewhat richer biscuit.

Raisins rolled in sugar and cinnamon, dropped in dough just before spooning the dough on baking pan or sheet.
