APPLESAUCE RHUBARB MUFFINS
 

2 c. all purpose flour
1 c. whole wheat flour
2 tsp. baking powder
2 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
2 eggs
1 1/3 c. packed brown sugar
1 1/3 c. applesauce
1 1/3 c. chopped rhubarb
Crumbled sugar cubes or cinnamon sugar

Mix flours, baking powder, cinnamon, baking soda, salt. Make well in center; set aside. In medium mixing bowl beat eggs, stir in brown sugar, applesauce and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (the batter should be lumpy). Fold in rhubarb. Fill muffin cups 18 to 20, sprinkle with sugar and cinnamon. Bake at 400 degrees for 18 to 20 minutes.
