1 1/2 c. oatmeal 3/4 c. whole wheat flour 3/4 c. white flour 4 tsp. baking powder 1/3 c. sugar 1/2 tsp. salt 1 tsp. cinnamon 1/2 tsp. nutmeg 1 egg or 2 egg whites, beaten 1 c. applesauce 1 c. light corn syrup Heat oven to 425 degrees. Combine first 8 ingredients in a large bowl, stirring well to blend. Make a well in the center and add remaining ingredients. Mix just enough to moisten. Spray muffin pans with cooking spray or line them with paper liners and fill 2/3 full with batter. Bake for 14 to 17 minutes or until lightly browned. A toothpick stuck in center should come out dry. Makes 24 medium size muffins. |
