ARMADILLO EGGS
 

1/2 lb. Monterey Jack Cheese, grated
1 pkg. Shake 'N Bake mix for pork
2 eggs, beaten
1 1/2 c. buttermilk biscuit mix
1/2 lb. bulk hot sausage
15 med. canned jalapeno peppers

Slit and seed peppers. Mix cheese and sausage. Add dry biscuit mix 1/3 at a time. This will be stiff. Knead several times and set aside. Stuff each pepper with bit of cheese; pinch pepper closed around the cheese. Pinch off a bit of sausage/cheese mixture and pat into a flat "pancake" about 1/2-inch thick. Place cheese-stuffed pepper in middle of each pancake and wrap completely with dough, making sure all edges and ends are sealed. Roll the dough covered pepper in your hand to mold into an egg shape. Roll in Shake 'N Bake until coated. Dip eggs into Shake 'N Bake after re-dipping in eggs you have beaten. Bake in 300 degree oven for 20 to 25 minutes.
