1 3/4 c. flour 3 tsp. baking powder 1/2 tsp. salt 1 tbsp. sugar (for apple fritters only) 1 slightly beaten egg 1 c. milk 1 tbsp. melted shortening Sift flour, adding baking powder and salt. Combine egg, milk and shortening. Pour into flour mixture. Blend just until smooth. Add 2 cups corn (fresh or frozen). Drop by spoonful into hot oil. Fry until nicely browned on each side. Drain on paper towel. You can use maple syrup for corn fritters and toss apple fritters into paper bag with sugar and shake. |
