Preheat oven to 400°F.
Popovers are easy to prepare and can be made in advance. They are a great served with creamed chicken or pot pie fillings or stews, sweet popovers go well with gingered apples or other fruit fillings.
Break eggs into a measuring cup and beat with a fork; add to blender or food processor container.
Add remaining ingredients and process for 15 to 20 seconds.
Pour into well greased popover or tall muffin pans.
Bake for 45-50 minutes. Do not open oven until popovers are done!
Cheese Popovers: Add 1 cup grated Cheddar or Monterey Jack cheese; use 3 or 4 large eggs instead of 2. For Parmesan Popovers, use only 1/4 cup and reduce salt in recipe to just a pinch. Parmesan Popovers are wonderful with fresh herbs added to the batter, such as basil and oregano (add herbs after batter is smooth).
Garlic Popovers: Roast garlic in oven or toast in olive oil until lightly golden. Puree garlic in blender until smooth before adding ingredients; process as above.
