2 c. thinly sliced onions 2 c. mushrooms, cleaned and slices 1 lb. chicken livers, washed 2 tbsp. paprika Salt and pepper to taste Water enough to barely cover Livers in pan Chicken broth can also be used 2 tbsp. lard or butter Take the lard or butter and melt it in a stew pot. When the grease is melted not too hot add paprika and stir it all in. Then put in the onions, mushrooms, and slowly simmer until onion begins to start getting soft. Cut the livers up in 3-4 pieces and add to pot along with the broth and salt and pepper. Cook until everything is soft. This can be made with a thinner base and then thickened like gravy and served over noodles or rice. |
