CRANBERRY CHICKEN
 

4-8 chicken breast halves
1 (16 oz.) can whole berry cranberry sauce
1 (15 1/4 oz.) can pineapple chunks; reserve juice
3/4 c. catsup
1/4 c. Open-Pit barbeque sauce
1 tbsp. horseradish
1 tbsp. soy sauce

Combine cranberry sauce, pineapple juice, catsup, barbecue sauce, horseradish and soy sauce in a medium size bowl. Stir until cranberry sauce is mixed throughout. Place chicken breasts in a baking dish large enough so that the chicken pieces do not overlap, bone side down. Pour 1/2 sauce mixture over chicken and marinate for 1/2 hour. Bake in 375 degree oven for 1 1/2 hours, basting with other half of the marinade sauce. Add pineapple chunks during the last 1/2 hour cooking time. Unbelievable combination that tastes great!
