BAKED CHICKEN STRIPS
 

2 whole chicken breasts, deboned and cut into 1 1/2 inch strips
Flour (seasoned with salt and pepper)
2 eggs, beaten
1 to 1 1/2 sticks butter - plus extra to fry strips in
2 cloves garlic, crushed
1 (18 oz.) can College Inn broth
Juice of one lemon

Dip chicken into beaten egg and then into flour to coat. Fry in butter or oil. Melt sticks of butter in saucepan, add crushed garlic - cook until tender. Stir in chicken broth and lemon juice. Simmer for approximately 30 minutes.

Place cooked strips in baking dish. Pour broth mixture over chicken and COVER and bake at 275 degrees for 30 minutes. May be served over white rice for a complete meal. Serves 4 to 6.
