3 c. cooked chicken or turkey, cubed 1/2 c. chopped toasted almonds (optional) 1/2 c. mayonnaise 2 tbsp. lemon juice 1/2 c. grated cheese 2 c. chopped celery 2 tbsp. grated onion 1/2 c. chopped green pepper 2 tbsp. chopped pimiento 1 can cream of chicken soup, undiluted 3 c. crushed potato chips Combine all ingredients except cheese and chips, toss lightly and spoon into a 1 1/2 quart casserole. Spread cheese and potato chips on top. Bake 1 hour at 300-350 degrees until golden brown. |
