BAKED CHICKEN WITH CHEESE
 

1/2 lb. fresh mushrooms
6 tbsp. butter
4 whole chicken breasts, skinned, boned, halved
1/2 c. grated Parmesan cheese
2 eggs, beaten
1 c. Italian seasoned bread crumbs
1/2 lb. Swiss cheese, Monterey Jack may be substituted, sliced
1/2 c. sherry

Saute mushrooms in 2 tablespoons butter and set aside. Coat chicken in Parmesan cheese, then dip in eggs, then bread crumbs. Brown in butter, then place in baking dish. Cover with sliced Swiss cheese, then sauteed mushrooms. Bake at 350 degrees for 15 minutes. Add sherry and bake 15 minutes longer. (Serves 6 to 8.)
