SWEET AND SMOKEY OVEN BARBECUED
CHICKEN
 

1 broiler-fryer chicken, cut in serving pieces
1 lg. onion, sliced

BARBECUE SAUCE:

1/2 c. catsup
1/3 c. Mazola oil
1/2 c. maple syrup
2 tbsp. prepared mustard
1/4 c. vinegar
1 tsp. hickory smoked salt
1/4 tsp. black pepper

Place chicken pieces, skin side up, in single layer in large, shallow baking pan. Tuck onion slices in around chicken. Mix sauce and pour over chicken. Bake in moderate oven (350 degrees) uncovered, for approximately one hour or until done. Recommended serving with rice, using remaining sauce on rice. Serves 4. Baste with sauce several times.
