BAKED CHICKEN SALAD
 

1 c. potato chip crumbs (4 c. whole chips)
2 c. diced cold chicken
1 1/2 c. celery pieces
1/2 c. mayonnaise
1 c. cubed Cheddar cheese
1 slice lemon, peeled
1/2 sm. onion, cut
1/2 c. almonds

Heat oven to 375 degrees. Grease a 2-quart casserole, blender-crumb potato chips. Set aside.

Put chicken and celery into greased casserole. Put mayonnaise, cheese, lemon and onion into blender, cover and process at blend until smooth. Remove cap and add almonds, processing only until chopped. Pour over chicken and celery and mix. Sprinkle potato chip crumbs over top. Bake 30 minutes.
