CARIBBEAN STEWED CHICKEN
 

Season 1 chicken (cut up) with salt, pepper, garlic and curry powder. Add lemon juice or vinegar to make marinade. Let stand a few hours to soak up seasoning. Lightly flour and brown in Dutch oven. Pour off fat. Cover chicken 3/4 way with water, add 1 can tomato sauce, 1 chopped onion, 1 green pepper, chopped, 2 cloves of garlic, crushed and sliced carrots.

Bring to a boil. Add 1 teaspoon Italian seasonings, salt and pepper to taste. Cover. Lower heat and cook until chicken is done. Serve over rice and beans.
