OVEN FRIED CHICKEN
 

3 1/2 lb. fryer
1 c. mashed potato flakes
1 tsp. paprika
1 tsp. salt
1/2 tsp. garlic powder
1/4 tsp. pepper
1/2 c. grated Parmesan cheese
1 lg. egg
1 tbsp. water

Cut frying chicken into serving pieces. On waxed paper, combine potato flakes and seasonings. In pie plate, beat egg and water. Dip chicken pieces in egg mixture, then roll in potato flake mixture. Place pieces, skin side up in 9x13 inch roasting pan. Bake 40 minutes in 400 degree oven. Do not turn. Serve with hot biscuits. Serves 4.
