A heart-healthy entree that is low in saturated fat and cholesterol. 3 oz. mushrooms, sliced 5 oz. tomatoes, coarsely chopped 3 oz. chopped green peppers 3 tbsp. chopped parsley 2 1/2 tsp. chopped pimento 1/4 c. low-sodium chicken broth 1 tbsp. lemon juice Dash of pepper
Place chicken in a baking pan after removing skin and fat (or can use fish). Combine all remaining ingredients and pour over chicken (or fish). Cover and bake at 350 degrees for 45 minutes. Makes 10 servings.
