Thaw and wash a 10 to 14 pound turkey. Inject 24 hours before frying. 1 sm. bottle garlic juice 4 tbsp. Tony's seasoning 2 tsp. salt 2 tsp. Hickory smoke salt 1 stick butter 1/2 c. water 4 tsp. lemon juice Tabasco to taste - 4 tsp. (if you like mildly hot), 8 tsp. (if you want it hot)
A boneless pork roast is a great substitute
Melt butter. Add all other ingredients. Stir until salt is melted. Inject turkey at 2 inch intervals, using 1/3 syringe each time. As you remove syringe, rub hole with finger to prevent liquid from oozing out. Place in plastic bag with any extra liquid. Seal bag; place in refrigerator. Turn bag to coat turkey several times during the 24 hour period.
Fry turkey at 350 to 375 degrees for 1 hour to 1 1/2 hours for a 10 to 12 pound turkey. Be sure oil is hot and covers turkey 2 inches. When turkey is done, it will float.
