BAKED HERB CHICKEN
 

1 c. herb stuffing, crushed
1/3 c. freshly grated Parmesan cheese
1/4 c. finely chopped fresh parsley
1 to 2 cloves garlic, minced
1 (3 lb.) frying chicken, cut up or 6 half breasts
1/4 lb. butter, melted

Preheat oven to 350 degrees. Combine stuffing, cheese, parsley, and garlic. Set aside. Dip chicken pieces in melted butter and then in stuffing, coating thoroughly. Place chicken pieces, not touching, on a cookie sheet or shallow baking pan, skin side up. Bake, uncovered, for 45 minutes to 1 hour, turning oven down if chicken browns too quickly. Chicken may be baked ahead and served at room temperature.
