STUFFED CHICKEN BREAST WITH MUSHROOM
GRAVY
 

4-6 boned chicken breasts
1 can spinach, drained
Grated Parmesan cheese

Flatten each piece of chicken. (Chicken can also be breaded, if you like). Put large spoonful of spinach and cheese on top. Roll up chicken and hold with a toothpick. Place in baking dish, and cook in 400 degree oven for 35-40 minutes.

MUSHROOM GRAVY:

Brown fresh mushrooms in butter (the amount of mushrooms depends on how many pieces of chicken you use). Add chicken broth and flour to make the amount of gravy you want (chicken bouillon and water may be used). Pour over chicken when done.
