I frequently have to go to Austin, and I try to time my trip so that I am in Columbus at lunch. Schobel's Restaurant there has really good lunch buffets. They always have a homemade soup on the buffet, and I love soup. Frequently they have had a potato soup which was the best I have ever tasted. I finally talked the cook out of her recipe. cut into 1" cubes, about 2 c. 1 c. water 3 tbsp. butter 3 tbsp. flour 2 c. hot milk 1 tsp. bacon bits 1 tsp. white pepper Salt to taste
Boil potatoes in water until tender and drain. Melt butter and add flour; mix thoroughly. Slowly add hot milk and stir until blended. Add potatoes, bacon bits, pepper and salt.
