2 lbs. frozen French fries 1 med. onion, chopped 3 hard boiled eggs, chopped 3/4 c. mayonnaise 1/4 c. pickle relish 1/3 c. celery, chopped 1 sm. jar pimiento, chopped Salt & pepper to taste Bring 4 quarts of lightly salted water to boil. Pour in frozen potatoes. Bring to boil again and cook about 5 minutes or until soft. Drain in a colander. Let cool. Mix all other ingredients in a large bowl. Add potatoes to mixture. Salt and pepper to taste. Add more mayonnaise for softer potatoes. Potatoes will be creamier if mixed while hot. |
