GERMAN HOT POTATO SALAD
 

4 lg. potatoes
4 slices bacon
2 tbsp. minced onion
1/2 c. vinegar
1/4 c. water
1/4 c. sugar
2 tsp. salt
1/4 tsp. pepper
1/2 tsp. dry mustard
1/4 c. chopped parsley

Wash unpeeled potatoes, then boil until tender. Cool slightly then peel and slice. Cut bacon into small pieces and fry crisp. Drain well. Combine onion, vinegar, water, sugar, salt, pepper, and dry mustard together in a large sauce pan. Heat to a boil. Remove from heat and add potatoes, parsley, and bacon. Stir gently with a fork. Heat on low until warmed through. Serves 6.
