GERMAN POTATO PANCAKES
 

3 eggs, separated
1 tsp. salt
1 tbsp. sugar
3 c. milk
2 1/2 c. sifted flour
1 tbsp. melted shortening
3 c. grated raw potatoes (Irish)

To well-beaten egg yolks add salt, sugar and milk. Gradually add flour and shortening, beating well. Stir in grated potatoes, fold in stiffly beaten egg whites. Bake at once on greased, hot griddle. Finely chopped onions are sometimes sprinkled on top of batter.
