ROASTED POTATO SALAD
 

4 cups red new potatoes, quartered
1 cup Miracle Whip Salad Dressing
2 boiled eggs, chopped
4 slices bacon, chopped & cooked
1/4 cup green onions, sliced
1/4 teaspoon salt
1/4 teaspoon pepper

Heat oven to 425 F. Place potatoes on 15 x 10 x 1-inch baking pan sprayed with no stick cooking spray. Bake 30 to 35 minutes or until potatoes are tender and golden brown, stirring once. Mix dressing, eggs, bacon, onions, salt and pepper in large bowl. Add potatoes; mix lightly. Serve warm or chilled. Makes 6 servings.
