1 1/2 c. canned pumpkin
2 eggs, beaten
1/2 c. light brown sugar
2 tsp. pumpkin pie spice
Pinch of salt
1/4 c. light corn syrup
1 c. evaporated milk
Pastry crust
2 oz. Kahlua
Use a store-bought 9-inch pie crust or line a pan with your own prepared pastry. Preheat oven at 425 degrees. If preparing your own pastry, bake for 8 minutes and remove from oven.
Mix milk, corn syrup, spice, salt, sugar and pumpkin. Then add eggs and Kahlua and stir until well blended. Pour ingredients into pie shell. Bake at 325 degrees for 40 minutes or until filling is barely set in center. Cool before serving.
