STRAWBERRY PIE WITH CRACKER NUT CRUST
 

Mix together in bowl and set aside: 1 c. chopped walnuts

In mixing bowl: beat 3 egg whites until stiff. Fold 7/8 cup sugar into egg whites. Fold egg/sugar mixture into cracker/nut mixture. Spread into 9 inch lightly greased pie plate. Bake 30 minutes at 350 degrees. Cool.

FILLING:

1 c. heavy cream, beaten stiff

Fold 1 package drained frozen strawberries (or use fresh berries, 1 1- 1 1/2 cups). Spread berry mixture in pie crust. Refrigerate until ready to serve.

This is a really lovely spring/summer dessert.
