1 c. chopped pecans
4 eggs (may use substitutes)
1/4 c. flour
1/2 c. melted butter
1 c. chopped dates
1 c. milk (2% milk)
1 tsp. vanilla
Lightly grease 9 inch pie pan. Sprinkle with pecans.
In a blender, mix remaining ingredients until well blended. Pour over pecans. Bake at 350 degrees until set, 30-35 minutes.
NOTE: This pie makes its own crust. It is not as sweet as a standard pecan pie, but a good substitute.
For Diabetics: Exchange: 1 bread, 1/2 lean meat, 3 fat.
