PUMPKIN PIE SNACK BARS
 

1 (16 oz.) can pumpkin
1 (12 oz.) can evaporated milk
3 eggs
1 1/4 c. granulated sugar
1 tbsp. + 1 tsp. pumpkin pie spice
1/2 tsp. salt
1 pkg. yellow cake mix
3/4 c. melted butter
1 c. chopped pecans (opt.)
Whipped topping (opt.)

Preheat oven to 350 degrees. Grease bottom of 9"x13" pan.

In mixing bowl combine pumpkin, evaporated milk, eggs, sugar, pumpkin pie spice and salt. Pour into prepared pan. Sprinkle dry cake mix evenly over pumpkin mixture. Sprinkle nuts on top of cake mix. Drizzle melted butter over all.

Bake for 50 to 60 minutes, until golden brown. Cool completely before cutting. Serve plain or with whipped topping. Refrigerate leftovers. Makes 12 to 15 servings.
