1 c. raisins 1 1/2 c. water 3/4 c. granulated sugar Pinch of salt 2 egg yolks 2 tbsp. corn starch 1 tbsp. butter 1 tsp. lemon extract MERINGUE: 2 egg whites 1/4 tsp. cream of tartar 4 tbsp. sugar Mix 1/4 cup water with corn starch. Add egg yolks and beat well to mix. Bring to boil: 1 1/4 cups water, raisins, sugar and salt. Add corn starch mixture. This thickens quick. Remove from fire. Add butter and extract. Cool. Pour into baked pie shell. Top with meringue made of egg whites, cream of tartar and granulated sugar. Put into 400 degree oven to brown meringue. |
