PATRICIA'S FRESH PEACH PIE
 

1 pkg. pie shells, regular - not deep dish
4-5 c. sliced, peeled fresh peaches
2/3 c. brown sugar
1/8 tsp. salt
1 tsp. cornstarch
1/4 tsp. cinnamon
1/8 tsp. nutmeg
1 tsp. lemon juice (optional)
1 tsp. vanilla (optional)

Mix peaches and next 5 ingredients. Add lemon juice and vanilla if additional seasoning is desired. Pour mixture into uncooked pie shell. Cover with solid or lattice top crust. Bake in prewarmed oven at 450 degrees for 10 minutes. Reduce temperature to 350 degrees and bake for additional 30 minutes. To prevent peaches from darkening while preparing - place slices in mixture of 1 quart water with 3 tablespoons lemon juice added.
