OREGON STRAWBERRY ANGEL PIE
 

1 c. unsweetened strawberry juice
1 c. white sugar
2 heaping tbsp. cornstarch
1 tsp. vanilla
3 egg whites
1/8 tsp. salt
1 (10 inch) baked pie shell
Whipped cream

Put strawberry juice, sugar and salt in top of double boiler. When hot, add cornstarch blended with a little water. Cook until thick and clear. Remove from heat, and partly cool. Remove from heat, and partly cool. Fold in well-beaten egg whites (holds peaks, but not dry). Add vanilla. Pour into 10-inch pie shell. Chill well. Top with whipped cream and garnish with fresh strawberries.
