CRAZY CORNMEAL CRUST APPLE PIE
 

6 to 8 cooking apples
1/2 c. granulated sugar
1/2 c. brown sugar
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. allspice
1 tbsp. orange juice
2 tsp. grated orange rind

PIE SHELL:

1 c. flour, sifted
1/2 tsp. salt
1/2 c. cornmeal
1/2 c. shortening
1/3 c. grated Cheddar cheese
1/4 c. ice water

TOPPING:

1/2 c. flour
1/3 c. sugar
1/3 c. butter, room temperature

TOPPING: Combine flour and butter until crumbly; gradually add sugar.

Peel, core and slice apples thin. Mix the sugars and spices in a large bowl. Blend with orange juice and grated rind. Mix with apples; set aside and prepare pie shell. Sift together flour, salt and corn meal. Cut in shortening until mixture resembles fine crumbs. Mix in grated cheese. Sprinkle ice water over mixture gradually mixing lightly with fork. Shape into a ball. Flatten on lightly floured surface. Roll to 1/8 inch thickness. Line a 9 inch pie pan. Trim and decorate edge. Pour filling into crust. Sprinkle topping over apples. Bake in 425 degree oven for 10 minutes, then turn oven to 350 degrees for 40 minutes. Yield 8 servings.
