FRESH RHUBARB COBBLER
 

2 (16 oz.) pkgs. frozen cut rhubarb or 5 c. sliced fresh rhubarb
1 c. white sugar
1 (3 oz.) pkg. strawberry flavored gelatin
1 (5 oz.) pkg. white cake mix (Jiffy mix)
1/2 c. butter, melted
1 c. water

Heat oven to 350 degrees. Put rhubarb in a 2 quart oblong dish. Sprinkle with sugar and dry gelatin, toss to mix and then spread evenly.

In a medium size bowl mix remaining ingredients with wooden spoon until blended. Pour over rhubarb. Bake 40 to 45 minutes, until golden brown.

Remove from oven and let stand 10 minutes before serving. Makes 16 servings. Can be served with ice cream.

I do the recipe with peaches and peach Jello, also use a yellow cake mix. It's great that way.
