FRESH PEACH PIE
 

3 tbsp. cornstarch
1/2 c. sugar or 1/4 c. sugar + 1 package substitute
2/3 c. water
1 pkg. peach flavored Jello
1/3 c. orange juice
1/2 (15 oz.) pkg. refrigerated pie crusts or make your own
8 lg. peaches
Sweetened whipped cream or Dream Whip
Fresh mint leaves

In saucepan, mix cornstarch and sugar. Stir in water until blended. Cook over medium heat until thick and bubbly, stirring constantly. Stir in dry Jello. Stir until dissolved. Stir in orange juice. Remove from heat. Pour into large bowl. Cool to room temperature.

Meanwhile, preheat oven to 450 degrees to bake pie crust if using bought crust. Unwrap and press into a 10" pie dish. Trim crust. Bake until light brown. In a large saucepan heat water to boiling, dip peaches. Plunge into cold water, peel and slice. Drop peaches into Jello mix. Stir to mix gently. Fill crust. Top with cream or Dream Whip. In center decorate with fresh mint leaves.
