ZUCCHINI PIE
 

4 c. sliced zucchini
1 c. chopped onion
1/4 c. butter
1/2 c. chopped fresh parsley or 1 tbsp. parsley flakes
1/2 tsp. each salt & pepper
1/4 tsp. each garlic powder & oregano
2 eggs, well beaten
8 oz. shredded munster or mozzarella cheese

Cook zucchini and onion in butter. Stir in seasonings. In large bowl beat in eggs, blend in cheese. Stir in veggies. Pour into unbaked pie shell. Bake at 375 degrees for 18-20 minutes. Serves 8-10.
