FIRST STEP: Slice thin 7 pounds green tomatoes. Soak in 2 gallons water with 3 cups lime for 24 hours.
SECOND STEP: Drain and soak in fresh water for 4 hours, changing every hour then drain. Make syrup of 5 pounds sugar, 4 pints vinegar and 5 teaspoons pickling spice. Bring to boil and pour over tomatoes. Let stand overnight in syrup. Next morning, boil gently 1 hour and put in jars and seal.
