PASTA WITH PICCANTES CHILIES SAUCE
 

4 green onions
1/2 red bell pepper
2 or 3 sm. cloves garlic
2 or 3 sm. red or green hot chili peppers
1/2 lb. fresh fettucini or linguine
3 tbsp. butter + 3 tbsp. olive oil
1/2 c. freshly grated Parmesan cheese (this is very important, don't use canned Parmesan)
3 tbsp. minced fresh parsley
1/2 tsp. salt
1/8 tsp. pepper

Mince onions, red bell pepper, cloves, garlic and hot peppers. Cook pasta according to directions. In skillet, heat butter and olive oil. When foam subsides, add green onions, bell pepper, garlic and chili peppers. Cook, stirring constantly, about 2 minutes. Remove from heat. Quickly add hot spaghetti to skillet; toss well, add cheese, parsley, salt and pepper. Toss. Serve immediately.
