1 to 2 tbsp. olive oil 2 cloves garlic, or to taste 1 lg. red onion 1/2 lb. baby shrimp 1 red pepper, chopped 2 lg. tomatoes, chopped 1/3 c. finely chopped fresh basil 1/3 c. finely chopped fresh oregano 3/4 lb. feta cheese 1/4 c. grated Parmesan cheese Enough pasta (fresh is best) for 4 people Saute garlic and onions in olive oil. Add shrimp, red pepper and tomatoes. Continue stirring over medium heat. Add basil and oregano. Stir in feta cheese until melted. Pour over cooked hot pasta. Sprinkle on Parmesan cheese. Enjoy!
