Pastry for one pie
2 c. mince meat
3 1/4 c. (30 oz.) can pumpkin pie mix
2 slightly beaten eggs
2/3 c. undiluted evaporated milk Line bottom and 1 1/4 inches up sides of 13 x 9 x 2-inch baking dish with pastry. Spread mince meat over bottom of crust. Combine remaining ingredients. Pour over mince meat. Bake in 350 degree oven for 50 to 60 minutes or until knife inserted near center comes out clean. PASTRY: Stir 1/4 teaspoon salt into 1 1/2 cups flour. Cut in 1/2 cup shortening. Stir in 1/4 cup water. Roll on floured surface to 15 x 11 inch rectangle. Makes one 13 x 9 inch pie. |
