POTATO SALAD FOR A CROWD
 

4 eggs (hard boiled & chopped)
6 tbsp. green pepper (chopped)
1/2 c. pimento (chopped)
3 c. celery (diced fine)
5 lb. potatoes
1/2 c. French dressing
1/4 c. onion (minced)
2 c. salad dressing OR mayonnaise
1/4 c. prepared mustard
1 1/2 tsp. paprika
2 tsp. salt (may use less)
2 tsp. sugar
Pepper

Cook potatoes and dice. Marinate potatoes in French dressing while still warm. Cool.

Combine salad dressing, mustard, paprika, salt, sugar and pepper. Toss with other ingredients. Chill. Serves 25 people.

Variation: Omit pimento and green pepper, and substitute sliced radishes.
