PARTY CHILI DISH
 

1/4 c. cooking oil
1 c. onion, chopped
1/2 c. green pepper, chopped
2 lb. ground chuck
2 (1 lb.) cans tamales
1 sm. can pitted ripe olives, chopped
2 (#2) cans kidney beans
1 (12 oz.) can whole kernel corn
1 (12 oz.) can cream style corn
2 (1 lb.) cans chili con carne, without beans
2 c. process American cheese, grated

We usually add more tamales.

Cook onion and green pepper 3-4 minutes in oil; add beef and stir until browned. Combine meat mixture, tamales, half of olives, beans, corn, chili con carne, and half of cheese. Turn into a 4 quart casserole. Sprinkle with remaining cheese and olives. Bake uncovered in a preheated oven 300 degrees for 1 hour and 30 minutes.

NOTE: Recipe may be refrigerated or frozen until needed. Yield 16 servings.
